POV – It’s late, and you get a chocolate craving only a warm, fudgey brownie will satisfy. The problem? Who feels like making a batch a brownies late at night? Yeah, not this girl. The solution? My go-to microwave brownie recipe. It cooks in 60-90 seconds and only takes a few minutes to throw together.

Microwave Brownie in a Mug
Equipment
- 1 Microwave Safe Mug
- 1 Spoon to stir
- 1 Measuring Spoons
Ingredients
- 3 tbsp all-purpose flour
- 3 tbsp granulated sugar
- 2 tbsp unsweetened cocoa powder (Dutch Processed is my preferrence)
- 1 pinch of salt
- 2 tbsp coconut oil, melted (or unsalted butter)
- 3 tbsp water or milk
- 1/2 tsp pure vanilla extract
- 2 tbsp semisweet chocolate chips
- 2 tbsp shredded coconut for garnish, (optional)
- ice cream and chocolate syrup for garnish, (optional)
Instructions
- In a microwave safe mug stir together flour, sugar, cocoa powder and salt.
- Add melted coconut oil or butter, water and vanilla. Stir until mixture is smooth, but avoid over mixing.
- Fold in chocolate chips or sprinkle on as topping (or both)
- Top with coconut shred if desired
- Microwave mug on full power for 60 to 90 seconds. Cook times vary with every microwave, but take a peek at the 60 second mark to avoid over cooking. Brownie is done when the top is cooked.
- Allow to cool for 5 minutes before topping with ice cream and chocolate syrup if desired. Enjoy!
