Equipment

  • 1 Microwave Safe Mug
  • 1 Spoon to stir
  • 1 Measuring Spoons

Ingredients

  • 3 tbsp all-purpose flour
  • 3 tbsp granulated sugar
  • 2 tbsp unsweetened cocoa powder (Dutch Processed is my preferrence)
  • 1 pinch of salt
  • 2 tbsp coconut oil, melted (or unsalted butter)
  • 3 tbsp water or milk
  • 1/2 tsp pure vanilla extract
  • 2 tbsp semisweet chocolate chips
  • 2 tbsp shredded coconut for garnish, (optional)
  • ice cream and chocolate syrup for garnish, (optional)

Instructions

  • In a microwave safe mug stir together flour, sugar, cocoa powder and salt.
  • Add melted coconut oil or butter, water and vanilla. Stir until mixture is smooth, but avoid over mixing.
  • Fold in chocolate chips or sprinkle on as topping (or both)
  • Top with coconut shred if desired
  • Microwave mug on full power for 60 to 90 seconds. Cook times vary with every microwave, but take a peek at the 60 second mark to avoid over cooking. Brownie is done when the top is cooked.
  • Allow to cool for 5 minutes before topping with ice cream and chocolate syrup if desired. Enjoy!
