Who loves the classic taste of a good ole’ BLT sandwich? Yeah, me too. If you are a BLT fan, you just might love this salad version tossed in a homemade garlic dressing. Simple enough for busy weeknights, but not your run of the mill side salad, either. Perfect for nights at home with the family or when you are entertaining.
Let’s Go!
Start by frying your bacon until crispy. Once cooked, remove from grease and set aside to cool. You will want to cube your cheese, slice your tomatoes, green onions as well as wash, dry and chop your lettuce before you begin assembling your salad.
Salad
10 slices of bacon cooked
1 head of romaine lettuce
1 pint of cherry tomatoes
cheddar cheese cubed (you can sub for any cheese you like, but the cheddar is our family’s favorite)
green onions sliced thin
croutons of choice
Dressing
⅓ cup plain greek yogurt
2 tbsp sour cream
1 tbsp of milk or heavy cream
½ tsp garlic powder
½ tsp salt
¼ tsp pepper
Directions
Chop, wash and dry lettuce. You can use paper towels to dry the lettuce, but a salad spinner makes this job much easier. Pour clean, chopped lettuce into a large bowl.
Slice the tomatoes and add them to the bowl.
Chop the cooked bacon into bite sized pieces and add to the bowl.
Add cubed cheese and green onions to the bowl.
In a separate bowl, whisk together dressing ingredients. Pour dressing over salad and mix well until everything is evenly coated.
Top with croutons and serve immediately. Enjoy!
Storage
Leftovers can be refrigerated for up to three days, but is best consumed on the day or day after it is prepared as the leaves will become soggy the longer it is refrigerated.
